Rock buns
Another one from my the mum!
ingredients
- 1/4 lb margerine
- 4 of brown sugar
- 1 egg
- 1/2 lb self rising flour
- A bit of milk
- Fruit an/or nuts to mix in (Raisins, cut up apples, dates..whatever you like)
- Or my favourite, mix in lemon and ginger

Cream margerine with sugar, add egg. Add flour and mix-ins a little at a time; add a bit of milk, but dough should be stiff and not runny. Just rub the mixture together with your fingers to combine all the ingredients.

Roll dough into balls and flatten on a cookie sheet, or just drop mixture onto sheet from a big spoon!

Bake at 425F for about 15 to 20 min. if you leave a little egg in the cup where you beat it, you can brush it on top of the buns, this way the turn a nice golden brown.

great for breaky wakey or a wee cuppa mid morning.
