Martha Padden's Shrimp Salad (Everybody's Favorite)
ingredients
- 22 oz. package cappellini, or angel hair pasta
- 2 Tbsp olive oil
- 8 small crisp dill pickles, finely chopped
- 6 large stalks of celery, finely chopped
- 8 large green onions, finely chopped
- 1/2 cup red pepper or pimento, chopped (optional)
- 1-2 cans pacific pearl small shrimp
- 1/2 lb fresh small shrimp
- 1 1/2 Tbsp Best Foods mayonnaise
- 3 Tbsp Lowry’s seasoning salt
- 1 cup (or a little less) fresh lemon juice or Sunkist lemon juice
directions
Cook pasta and drain. While warm, add olive oil and mix. Cut the pasta into smaller pieces. Then add all remaining ingredients - shrimp last. Chill for 2 days. You may want to add more lemon juice or other ingredients on the day you serve it.
