Key Lime Squares
ingredients
- Crust:
- 1Â 1/2 sticks unsalted butter, softened
- 5 tablespoons confectioner’s sugar, may require up to 7 tablespoons
- 2 cups flour
- pinch salt
- 2 teaspoons ice water
- 2 teaspoons vanilla
- 1 cup pecans, finely chopped
- Filling:
- 2 14ounce cans sweetened condensed milk
- 5 egg yolks
- 2/3 cup key lime juice (can substitute regular lime juice)
- zest from 2 limes

Crust:

Add butter to sugar and blend. Combine flour and salt. Combine ice water and vanilla. Alternate adding flour and water to butter and sugar. Add pecans. Roll with rolling pin between waxed paper to approximate size of pan. Press into bottom of 9 x 9 pan which was coated with cooking spray. Bake at 350 degrees for 25 minutes.

Mix milk, juice and zest. Whisk in egg yolks. Pour filling over baked crust and bake at 350 degrees for 10 more minutes. Add whipped cream decorations if desired.
