Summer Salsa
Travis experimented with this recipe for a long time before he finally decided it was finished. This salsa is light, refreshing, healthy, and delicious!
ingredients
- 5 Small, Sweet Tomatoes (Campari Tomatoes work well)
- 1/2 C. Sweet Onion
- 1/2 C. Fresh Cilantro
- 1 TBSP Chopped Fresh JalepeƱo.
- 2 TBSP Olive Oil
- 2 TBSP White Vinegar
- 1 TBSP Chopped Fresh Garlic
- 2 TBSP Lime Juice
- 2 TBSP Lemon Juice
- 2 TSP Sea Salt
directions
Combine all ingredients in food processor and pulse until almost a gazbacho consistency. Chill for 1-2 hours. Serve with light, white tortilla chips.
