Rasberries and Blackberries with Champagne Cheeses
This is a great afternoon appetizer and is best served with flat bread or French bread.
ingredients
- 4 oz. Goat Cheese
- 4 oz. Cream Cheese
- 2 TBSP Coursely Chopped
- Pine Nuts
- 1 TBSP Fine, Dry Bread Crumbs
- 2 TBSP Sugar
- 2 TBSP Champagne Vinegar
- 1 TBSP Olive Oil
- 1 TBSP Honey
- Pinch of Black Pepper,
- Garlic Powder, and Salt
- 6 oz. Rasberries
- 6 oz. Blackberries
directions
Preheat oven to 400 degrees F. Mix goat cheese and cream cheese in food processor or by hand until blended. Form mixture into a round ball about the size of a hockey puck. Place on an oven proof plate or on an aluminum foil coated cookie sheet. Combine chopped nuts and bread crumbs in a small bowl. Press on top and sides of cheese ball. Place cheese ball in center of oven for ten minutes or until lightly browned. In medium bowl, combine sugar, vinegar, olive oil, honey, pepper, garlic, and salt. Gently mix in berries. Flatten top of cheese ball, spoon berries over top. Serve warm.
