Brussels Sprouts with Hot Bacon Dressing

- 2 eggs
- 1/4 cup sugar
- 2/3 cup white vinegar
- 1/3 cup water
- 1/2 teaspoon dry mustard
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 12 strip of bacon, halved crosswise

- 6 10-ounce packages frozen brussels sprouts, thawed

Beat together eggs, sugar, vinegar, water, mustard, salt and pepper. Fry bacon until crisp. Drain on paper towels. Discard all but 1/4 cup of the bacon grease. Add egg mixture to hot skillet. Reduce heat and stir constantly for 5 minutes until smooth and thickened. Over and set aside.

Boil brussels sprouts about 8 minutes over medium heat. Drain and place in bowl. Pour egg mixture over the top and garnish with crisp bacon.
