Orzo Salad
ingredients
- 1 lb. Orzo
- 8 oz. feta cheese
- 1 c. chopped fresh basil
- 1 c. chopped green onions
- 1 pkg cherry tomatoes
- 2 chicken breasts, sliced (optional)
- 1/2 C. pine nuts, toasted
- Vinaigrette
- 3 T. lemon juice
- 3/4 C. olive oil
- salt and pepper to taste.

Boil Orzo until tender and drain. Transfer to large bowl. Mix feta, basil and green onions into Orzo while still warm. Add tomatoes, chicken and pine nuts. Toss with Vinaigretee.

Vinaigrette - Mix lemon juice, garlic, salt and pepper together. Whisk in olive oil.
