Healthy alternative to your average Mexican burrito/enchilada

ingredients

  • Whole wheat flour tortillas
  • 1 lb ground turkey
  • 1 small diced onion
  • 1 clove grated garlic
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • salt and pepper to taste
  • juice of one lime
  • 1 can black beans
  • 1 can enchilada sauce
  • 1 8 oz block of 2% sharp white cheddar (grated)
  • 1 teaspoon chopped fresh cilantro
  • 3/4 cup salsa or one small can tomato sauce

directions

Heat 2 teaspoons EVOO in pan over medium-high. Add onions and saute until translucent. Add ground turkey and saute until brown and caramelized. Add coriander, cumin, garlic, salt and pepper. Saute for 1-2 minutes until combined. Add salsa and cook 2-3 minutes. Drain and rinse black beans. In a food processor, add beans, juice of 1/2 lime and a splash of the enchilada sauce. Combine until resembles a paste like consistency. Take a tortillia and coat one side with the bean mixture. Next, add a few spoons of the meat mixture and a sprinkle of cheese. Fold over like a burrito and place seam side down in a casserole dish. Continue this until you have used all of the bean and meat mixture and the casserole dish is full. Now, top with the remaining enchilada sauce and cheese. Bake at 350° for 30 minutes until golden and bubbly. Sprinkle with fresh cilantro and serve with a dollop of light sour cream and salsa.

OK, you definitely cannot tell this is ground turkey. If my husband ate it, loved it, and could not tell, it is a definite winner!!
