Southwest Roll-Ups
ingredients
- 2 tbsp. salsa
- 1 jalapeño pepper, seeded
- 1 garlic clove
- 1 tbsp. chopped onion
- 1 can (16 oz.) refried beans
- 1/2 tsp. ground cumin
- 1 tbsp. chopped fresh cilantro
- 1 cup Chicken (leftover seasoned chicken is ok)
- 1 cup (4 oz.) shredded cheddar cheese, divided
- 12 fat-free flour tortillas
- Sour cream and additional salsa for garnish
directions
Place the first 8 ingredients and 1/2 cup cheese in a food processor; blend until smooth. Spread evenly over tortillas. Roll up and place seam side down in a 13x9 inch baking dish coated with cooking spray. Cover and bake at 350° for 20 minutes or until heated through. Sprinkle with remaining cheese; let stand until cheese melts. Serve with sour cream and salsa.
