Fattoush (Syrian Bread (pita) salad)
I could eat this as a meal, as could all of you! It was always hard to get the black olives to stay in this salad...seems like it was the first thing you ate :)
ingredients
Salad- About 4 cups shredded lettuce (romaine and/or iceberg)
- 1 large or 2 small cucumbers, small dice
- 2 medium tomatoes, chopped
- 1/2 cup chopped parsley, leaves only, no stems
- 1/4 cup chopped spearmint leaves, no stems
- 1 bunch green onions, finely sliced
- Lots of Black Olives, sliced or quartered
- 1/2 teaspoon sumac
- 2 Loaves of pita bread toasted until golden brown (or not, it’s good un-toasted, too), broken into pieces the size of a quarter
- 1/2 cup lemon juice
- 1/2 cup olive oil
- 2 to 4 cloves garlic, super fine dice. Actually, smoosh them, more like a paste.
- 1 teaspoon salt
- Pinch of pepper

In a small bowl mix all dressing ingredients well.

Put all salad ingredients in a large bowl and toss with 1/2 to 1 cup dressing. Serve immediately.
notes
I usually don't ever add onions, as I really don't like them raw. You could add a bit of thyme if you like, but that's not one of my favorite seasonings, so I usually don't.
