Laurie Padden's Caesar Salad
Passed down to Laurie from her mother, Virginia Moffett.
ingredients
- For the Salad:
- Romaine lettuce for 8, torn into pieces
- Parmesan cheese
- Croutons
- Tomatoes, skin removed and chopped into bite-sized pieces
- Bacon (optional)
- Chopped green onions
- For the Dressing:
- 3 eggs, coddled
- 1/4 cup olive oil
- 1/4 cup canola oil
- Juice of 2 lemons
- 3 cloves garlic, crushed
- 1/2 tsp dry mustard
- 1 tsp sugar
- Salt and pepper to taste

Put all dressing ingredients in blender and blend together. Add more salt and pepper as necessary.

(This will make more than you need and can be saved in the refrigerator for a couple days).
