Tomato and Red Onion Salad
ingredients
- 5 roma tomatoes, chopped in big chunks
- 1 red onion, chopped fajita style
- 1 container of cherry sized mozzarella balls
- 1/4 cup olive oil
- 1 & 1/2 tablespoon lemon juice
- 1 garlic clove, minced
- 1/2 teaspoon salt
- 1/2 teaspoon oregano
- 1/8 teaspoon black pepper
- a couple of sweet basil leaves chopped up

Mix all the ingredients except the basil together in a medium sized bowl. Cover with clear wrap and leave in fridge until well chilled. The longer it sits the better.

Right before serving, add the basil.
