Bean and Corn Dip
ingredients
- 1 cup sugar
- 1/2 cup cider vinegar
- 1/2 cup olive oil
- 1 can (15oz) black beans, drained and rinsed
- 1 can (15oz) black eyed peas, drained & rinsed
- 1 can shoepeg corn, drained
- 1 small jar pimientos (about 4 ounces), minced
- 1/2 cup jalapeno peppers, minced
- 1 cup celery, diced small
- 1 cup red onion, diced small

Combine sugar, cider vinegar and olive oil in a small saucepan. Heat over low heat until sugar is dissolved, stirring frequently. Once sugar has dissolved, remove from heat and set aside. Let cool to room temperature.

While waiting start preparing the remaining ingredients. Combine black beans, black eyed peas, corn, pimientos, jalapenos, celery and red onion in a medium bowl.

Once the dressing has cooled, pour it over the beans mixture and stir to combine. Place in the refrigerator to marinate for at least 1-2 hours.
