Black Bean Salsa
ingredients
- 1 cup canned black beans, rinsed
- 2 ripe mangos, peeled, seeded and diced small (papayas or corn can be used instead of mangos.)
- 1/2 red bell pepper, diced small
- 1/2 green bell pepper, diced small
- 1/2 red onion, diced small
- 3/4 cup pineapple juice (use 6 oz. can)
- 1/2 cup lime juice (about 4 limes)
- 1/2 cup chopped cilantro (if you make ahead, put in cilantro just before serving)
- 2 Tblspns. ground cumin
- 1 Tblspn. minced chile pepper of your choice
- Salt and pepper to taste

Combine and mix well.
