ingredients

  • 1 cup canned black beans, rinsed
  • 2 ripe mangos, peeled, seeded and diced small (papayas or corn can be used instead of mangos.)
  • 1/2 red bell pepper, diced small
  • 1/2 green bell pepper, diced small
  • 1/2 red onion, diced small
  • 3/4 cup pineapple juice (use 6 oz. can)
  • 1/2 cup lime juice (about 4 limes)
  • 1/2 cup chopped cilantro (if you make ahead, put in cilantro just before serving)
  • 2 Tblspns. ground cumin
  • 1 Tblspn. minced chile pepper of your choice
  • Salt and pepper to taste
