Southwest Quinoa Pilaf
ingredients
- 1 tbs. olive oil
- 1 1/2 cup chopped onion
- 6 Garlic cloaves minced
- 1 1/4 cup quinoa
- 1/2 tsp. cumin
- 1 14 oz. can chicken broth
- 1 15 oz. can black beans, rinsed
- 1 cup frozen corn
- 1 tomato diced
- 1/2 cup peeled jicama (diced)
- 2 scallion sliced thinly
- 1 jalapeno pepper diced
- 2 Tbs lime juice
- 1/4 tsp salt
- 2 Tbs. chopped cilantro

In a 4 Qt. dutch oven heat oil over medium heat. Add onion and garlic cook until tender.

Rinse and drain quinoa. Add quinoa nad cumin to onions in dutch oven. Cook and stir in quinoa until browned (about 3 minutes)

Add broth and 1 1/4 cups water to quinoa mixture. Bring to a boil, reduce heat and simmer until quinoa is tender, about 15-20 minutes.

In a seperate bowl combine beans, corn jicama, scallions, jalepeno,lime juice and salt.mix all together and sprinkle with cilantro.
