Summer fresh salad is a different kind of salad which makes you keep coming back for more.

ingredients

  • Salted Codfish (2lbs.), 3 hard boiled large eggs, one small onion sliced finely,tomato sliced in squares,virgin olive oil,red vinegar black pepper.2 boiled potatoes, (optional) Im sorry about not having a picture,,,,,Use your imagination and put all those colors together....aah! What did I tell you hnmm!

directions

Open packaged of codfish wash salt off and put it to boil for about half hour, peel potatoes cut potatoes as if you making potato salad and put it to boil together with eggs,half hour, Take avocado ,tomatoes and onion cut them into small pieces in one bowl,remove codfish from stove, under running water unstring the codfish in bite size,add the potatoes pieces place all in bowl seasoned with oil and vinegar,black pepper to taste mm mm gooooood

notes

This is best eaten in the summer time with some spanish white rice
