CHINESE SUNDAES
ingredients
- 2 large can Chinese noodles
- 1/2 large box long grain rice
- Chicken and gravy 1 – 2 chickens
- 2 pkg. frozen peas
- 1 bunch celery, chopped
- 4 bunches green onions chopped
- 12 oz grated Cheddar cheese
- 1 large can pineapple, crushed
- 1 large pkg. almonds, sliced
- 1 large shredded coconut
- 3 tomatoes cut into wedges
- 1 can cream of chicken soup
- 1 can pimentos, cut up
- 1 onion
- 1 bay leaf
- Salt & Pepper

This is great for a party. Have everyone bring something. Have chicken cut into pieces. Cover with water and cook 1 hour or until tender. Add 1 onion, bay leaf, salt and pepper while cooking. Cool and remove chicken from bones and cut into small pieces. Prior to serving, heat broth; and soups and pimentos. Serve buffet style and everyone can build their own “sundaes”. This is an excellent recipe for a large group. I have used it for a young adult luncheon and I also used it for a welcome dinner at BYU. I used 5 chickens and served 60 people. Each person contributed some part of the dinner. It was a great success.
