Cliff's Most Excellent Barbecued Chicken

- prep time:
- 15 minutes
- total time:
- 1-1/4 hours (includes 1 hour grilling)
A very simple way to barbecue chicken, guaranteed to be successful!
ingredients
- 1 whole cut-up chicken, thawed
- salt and pepper
- Jack Daniel’s No. 7 Original BBQ Sauce
directions
Preheat the grill for about 10 or 15 minutes. Place on the lowest setting possible. Salt and pepper the chicken. Place chicken pieces on the grill. Close the grill cover to create an oven atmosphere. Turn pieces over after 10 minutes and close cover; repeat every 10 minutes. At 50 minutes, brush with Jack Daniel’s sauce on one side. Turn pieces so sauce side is on the grill. Close cover and cook for 5 more minutes, then brush sauce on other side of chicken pieces. Turn pieces over with sauce side down on grill, close cover, and cook for another 5 minutes. After 60 total minutes, check middle of breast for doneness with a knife. If still pink on the inside, it’s not done. Chicken is done when the meat is white and moist. If not done, keep cooking and turning every 10 minutes until done. Splash liberally with BBQ sauce.
notes
Cliff has always been a great barbecuer, and his chicken is fantastic! Always moist and tender, with a delicious honey tang. His work gets better every year! This chicken can, of course, be frozen and heated up later.
