Chicken Cacciatore Stew
This dish is cooked in one dish is the microwave so clean up is easy. I like to serve it over egg noodles so the kids think they are just eating pasta with a red sauce.
ingredients
- 1 Pound boneless, skinless chicken thighs, cut into 1-inch cubes
- 1 Cup sliced mushrooms
- 3/4 Cup sliced zucchini
- 1/2 Cup chopped onions
- 1/2 Cup chopped green bell pepper
- 2 Garlic cloves, minced
- 1 Tablespoon extra virgin olive oil
- 16 Ounces tomato sauce
- 1/4 Cup red wine
- 1 Teaspoon oregano
- 1/2 Teaspoon salt
- 1/2 Teaspoon dried thyme
- 1/4 Teaspoon pepper
- 12 Ounces wide egg noodles
- Grated parmesan cheese

Cook egg noodles according to package directions.

Meanwhile, put chicken in a 2-quart baking dish and cover with waxed paper. Microwave on HIGH for 6 minutes, stirring after 3 minutes. Drain; transfer chicken to a small bowl. Combine mushrooms, zucchini, onions, bell pepper, garlic and olive oil in the same dish and toss well. Microwave, uncovered, oon HIGH for 4 minutes, stirring after 2 minutes. Add the tomato sauce, wine, oregano, salt, thyme and pepper and stir well. Microwave on High for 10 minutes, stirring every 3 or 4 minutes.
