Easy Eclair Dessert
If you ever have a sweet tooth and need a nice cool dessert, this is for you. I have used sugar-free and fat free ingredients to cut calories and sugar.
ingredients
- 2 packages instant fat-free/sugar free vanilla pudding
- 2 cups fat-free/skim milk
- 1 cup low-calorie cool whip topping
- 1 box graham crackers
- 1 15oz container chocolate (50% splenda) frosting

Mix the vanilla pudding and milk together until smooth

Fold in whip topping

Line 9 by 13 pan with single layer of graham cracker

Spread half the pudding mixture over the graham crackers

Add a second layer of graham cracker

Spread the rest of the pudding over second layer

Layer a third layer of graham cracker

At this point heat the chocolate frosting in the microwave for 20-30 seconds (until its soft)

Spread the chocolate over the third layer of graham cracker (use as much as you would like,I usually have some left over)

Cover with foil or plaster wrap and refrigerate 4 hours or over night.
