Chicken Bruschetta
ingredients
Chicken- 4 boneless skinless chicken breast
- 1 tsp garlic powder
- 1/4 tsp salt
- 1/8 tsp pepper
- 2 tbsp. olive oil
- 1 jar (4.5 oz.) mushrooms, drained
- 5 cloves garlic, finely chopped
- 1/4 tsp. salt
- 1/2 cup chopped red onion
- 1/2 cup loosely packed chopped fresh basil or 1 tsp. dried basil leaves
- 3 medium plum (Roma) tomatoes, seeded, chopped
- 4 tsp balsamic vinegar
- 1/8 tsp freshly ground black pepper
- 1/4 cup shredded Parmesan cheese (1 oz.)
- Fresh basil sprigs, if desired.

1. Spray broiler pan with cooking spray. Sprinkle chicken breast with garlic powder, 1/4 tsp salt and 1/8 tsp. pepper; place on broiler pan. Broil 4 to 6 inches from heat 12 to 16 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (170°)

2. Meanwhile, in large nonstick skillet, hear oil over medium-high heat until hot. Add mushrooms, garlic and 1/4 tsp. salt; cook 1 to 2 minutes,

stirring occasionally, until garlic is tender. Add onion, chopped basil, tomatoes, vinegar and 1/8 tsp pepper; cook and stir 30 to 45 seconds or until thoroughly heated.

3. To serve, arrange chicken on individual plates. Sprinkle with half of the cheese. Top each serving with mushroom mixture; sprinkle with remaining cheese. Garnish with basil sprigs.
