Mushroom Ragout with Soft Polenta
ingredients
- 2 tbsp olive oil
- 1.5 lb mixed mushrooms, quartered
- 1 onion, minced
- 2 cloves of garlic, minced
- 1 tbsp minced fresh thyme
- 1/4 tsp salt and pepper
- 1/2 cup dry white wine or veg stock
- 1 tbsp all purpose flour
- 1.5 veg stock
- 1/4 chopped fresh parsley

In a dutch oven heat oil over med high heat. Saute mushrooms, onion, garlic thyme, salt and pepper until no liquid remains. 8 mins.

Add wine, cook, stirring about 4 mins. Add flour, stir to coat. Stir in stock and bring to a boil. Reduce heat and simmer, stirring occasionally until slightly thickened. Stir in parsley.
