Rockmelon Salad with tomato, cucumber and goat's cheese

ingredients
Salad- 1/2 a ripe cantaloupe
- 1/2 cucumber, peeled and sliced
- 8- 10 cherry tomatoes, halved
- Goat’s cheese crumbled
- 1 tbs mint leaves, torn
- 1/4 cup olive oil
- 1 tbs red wine vinegar
- pinch of berry sugar

For the dressing whisk all ingredients together in a bowl add a pinch of sea salt and pepper to taste, set aside.

Cut the melon into 4 wedges, scoop out seeds and discard. Cut the flesh away from the skin, discard skin. Cut each wedge into thin slices.

Arrange melon, cucumber, tomatoes on plates. Crumble cheese over top and drizzle dressing through out. Sprinkle with mint leaves and season with salt and pepper. Serve.
