ingredients

  • Eggs / egg substitue
  • Peppers - any color
  • Onion
  • Mushrooms
  • Spinach
  • Grape tomatoes
  • Cheese - goat or gorganzola, or cream
  • Greek Yogard

    Sautee veggies with a tad olive oil / butter

  • 2

    Mix yogurt and eggs together

  • 3

    Using the same pan, move veggies to the side of pan, pour egg mixture in then scoop veggie mixture on top of eggs. Sprinkle with choice of cheeses. I’ve used goat cheese, gorgonzola, cream cheese - all are nice.

Brad McConnell made this for me during my reunion visit and it was simply delightful. He used cream cheese and since I've experimented w/ various veggies and cheeses. ALL GOOD.
