Chicken Livers with Mushrooms

ingredients

I.
  • 1 lb. chicken livers
  • 1/4 c. chopped onions
  • 2 T. butter
  • 1 T. oil
  • 1 lb. small mushrooms
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 3 T. broth
  • 1/4 c. white wine
II.
  • 1 large onion, chopped
  • 2 T. butter (or half olive oil and half butter)
  • 1 lb. chicken livers
  • 1 lb. mushrooms, sliced coarsely
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • pinch oregano
  • 1/2 c. red wine

directions

Saute onions 2 minutes. Cut livers in half and add to onions. Cook 2 minutes and add mushrooms. Season, stir gently and cook 4-5 minutes. Add wine and cook 2 minutes.
