Siam Stir Fry Wraps
ingredients
- Tofu Wraps
- 1 tbsp sesame oil
- 1/2 cup chopped red bell pepper
- 1 tbsp minced peeled fresh ginger
- 2 tsp curry powder
- 4 garlic cloves minced
- 1 bag (16 oz.) cabbage and carrot coleslaw mix
- 2 tsp minced fresh cilantro
- 2 tsp minced fresh basil
- 2 tsp fresh lime juice
- 1 package (12 oz.) extra firm tofu
- 1 package bean threads (cellophane noodles)
- 4 curly leaf lettuce leaves
- 4 10" flour tortillas
- Peanut Sauce
- 1/4 cup fresh lime juice
- 3 tbsp creamy peanut butter
- 3 tbsp low sodium say sauce
- 3 tbsp honey
- 1 tbsp chili paste with garlic
- 4 garlic cloves, minced

For Peanut Sauce:

Combine all ingredients in a small bowl. Sir well with a whisk.

For Tofu Wraps:

Heat oil in large nonstick skillet over medium high heat. Add bell pepper, ginger, curry , garlic and coleslaw mix. Saute four minutes until cabbage wilts. Stir in soy sauce, cilantro, basil, lime and tofu. Remove from heat. Cook bean threads in boiling water for 1 minute. Drain. Place lettuce leaf on tortilla, then 1/4 bean threads, 1 1/4 cup tofu and 2 tablespoons peanut sauce.
