Cilantro-Lime Chicken Fajitas
A tasty Tex-Mex treat
ingredients
Marinade- 1 1/4 cup chopped fresh cilantro
- 3/4 cup olive oil
- 5 Tbsp. lime juice
- 2 1/2 tsp. ground cumin
- 1 1/4 tsp. chili powder
- 6 chicken breast halves
- 3 poblano chiles, cut in strips (optional)
- 3 large bell peppers, cut in strips
- 2 red onions, sliced in rounds
- 12 8" flour tortillas
- salsa
- guacamole
- sour cream
- cilantro
- sliced scallions
- chopped chiles

Puree marinade ingredients in food processor. Season marinade with salt and pepper.

Place chicken in glass baking dish. Pour 1/3 cup marinade over chicken and turn to coat.

Arrange chiles, peppers, and onions on large rimmed baking sheet. Pour 1/2 cup marinade over, and turn to coat.

Sprinkle chicken and veggies with salt and pepper. Reserve remaining marinade.

Grill chicken until cooked through, about 7 minutes per side. Grill vegetables until tender (or sautee in skillet on stove top), about 15 minutes for onions and 12 minutes for peppers.

Warm tortillas about 1 minute per side.

Slice cooked chicken, and serve alongside vegetables with tortillas and assorted toppings.
