Sara Langley's Minestrone Soup
This is a recipe from my friend who owned Langley’s Restaurant. It’s fast and easy.
ingredients
- 6 cloves chopped garlic
- 2 chopped yellow onions
- 2 to 3 cups chopped carrots
- 2 to 3 cups chopped celery
- 2 lg cans of good quality chicken stock
- 1 small can of tomato paste
- 1 cup barley
- 1 cup frozen corn
- 1 can of kidney beans, drained
- 2 Tbl. Italian seasoning
- 1 Tbl. basil
- 3 Tbl. kosher salt
- pepper to taste
- 1 bag frozen tortellini
