Summer Vegetable gratin
ingredients
- 2 to 3 medium zucchini, sliced in rounds
- 2 to 3 medium yellow squash, sliced in rounds
- 2 to 3 Tbsp. olive oil
- Freshly ground black pepper to taste
- 4 Tbsp. unseasoned breadcrumbs
- 4 Tbsp. grated pecorino romano cheese
- 1 tsp. dried thyme or 3 sprigs fresh thyme, chopped
- 1 to 2 garlic cloves, minced
directions
Preheat oven to 425° In a medium bowl combine zucchini, yellow squash, and 2 Tbsp. olive oil. Sprinkle with pepper. Transfer to a greased 2-quart square baking dish. In a small bowl combine breadcrumbs, cheese, thyme, garlic, and remaining 2 Tbsp. olive oil. Sprinkle crumb mixture over vegetables. Bake uncovered for 20 to 25 minutes or until vegetables are tender. If topping browns too quickly, cover loosely with foil.
