Gingerbread Cookies - cutouts
Good recipe for gingerbread men, etc. From Joy of Cooking Cookbook p 828
ingredients
- 3 c AP Flour
- 1 1/2 tsp baking powder
- 3/4 tsp baking soda
- 1/4 tsp salt
- 1 Tbsp grd ginger
- 1 3/4 tsp grd cinnamon
- 1/4 tsp grd cloves
- 6 Tblsp butter, softened
- 3/4 c packed Dk brown sugar
- 1 Lg egg
- 1/2 c molasses
- 2 tsp vanilla
- 1 tsp finely grated lemon zest
- decorations: red hots, sprinkles, colored sugars, etc
directions

1) Whisk together dry ingredients (flour thru cloves). Set aside.

2) Beat butter, brown sugar, & egg on medium speed until well blended.

3) Add last 3 ingedients & beat until wll combined.

4) Gradually add in dry ingredients until well blended & smooth.

5) Divide dough in half. Wrap each in plastic wrap & let sit at room temperature for at least 2 hrs or up to 8 hrs. (Can be refrigerated for up to 4 days. Return to Room temp before using)

** Preheat oven to 375 deg F **

6) Place 1 portion of dough on a lightly flour surface. Roll dough to a scant 1/4“ thickness. Cut out 4”-5“ tall ginger people. Transfer to cookie sheet 1-1/2” apart with spatula. DECORATE.

7) Bake one sheet at a time, until edges are just barely dark, 7-10 min.

8) Remove sheet to rack & let stand until cookies firm slightly. Transfer cookies to rack to cook completely.

1st made Christmas 2008 - wonderful taste but fragile in the cookie jar. (OOPS! I'm pretty sure I used 1-1/2 sticks of butter OR DOUBLE the recipe. Will try regular amt next time)
