Holiday Minestrone Soup
A nice alternative to a heavy meal at the holidays, this colorful soup is a crowd pleaser.
ingredients
- 1 onion, chopped
- 1 clove garlic, finely chopped
- 2 celery stalks, chopped
- 2 carrots, chopped
- 1 tablespoon olive oil
- 2 cups frozen mixed vegetables
- 16 ounces diced tomatoes
- 5 cups chicken broth or stock
- 1 can kidney beans
- 1 bay leaf
- 1/4 teaspoon basil
- 1/4 teaspoon oregano
- 1/4 teaspoon pepper
- 1 teaspoon salt
- 1 small zucchini, sliced
- 1 cup elbow macaroni
- 4 tablespoons shredded Parmesan cheese

1. Saute onion, garlic, celery and carrots in oil.

2. Add mixed vegetables, tomatoes, stock, beans and seasonings. Cook over low heat until veggies are tender.

3. During last 10 minutes, add zucchini and macaroni.
