Scampi Primavera

ingredients

  • 1 lb. spaghetti
  • 3/4 c. olive oil
  • 3 garlic cloves
  • 1/2 t. lemon zest, finely chopped
  • 2 carrots (2" thin strips)
  • 8 oz. zucchini (2" thin strips)
  • 1 red bell pepper (2" thin strips)
  • 1 1/2 lbs. medium shrimp
  • 2 T. lemon juice
  • 3/4 t. salt
  • 1/8 t. pepper
  • 2 T. fresh basil or 2 t. dry basil
  • 2 T. fresh parsley

    Cook spaghetti as directed on package.

  • 2

    Heat oil in a large skillet. Cook and stir garlic and lemon zest, about 30 seconds.

    Add vegetables and shrimp. Cook and stir over medium heat until shrimp turns pink, about 3-4 minutes.

    Sprinkle with lemon juice, salt and pepper.

    Stir in basil and parsley.

  • 6

    Spoon over pasta. Toss to combine.
