Scampi Primavera
ingredients
- 1 lb. spaghetti
- 3/4 c. olive oil
- 3 garlic cloves
- 1/2 t. lemon zest, finely chopped
- 2 carrots (2" thin strips)
- 8 oz. zucchini (2" thin strips)
- 1 red bell pepper (2" thin strips)
- 1 1/2 lbs. medium shrimp
- 2 T. lemon juice
- 3/4 t. salt
- 1/8 t. pepper
- 2 T. fresh basil or 2 t. dry basil
- 2 T. fresh parsley

Cook spaghetti as directed on package.

Heat oil in a large skillet. Cook and stir garlic and lemon zest, about 30 seconds.

Add vegetables and shrimp. Cook and stir over medium heat until shrimp turns pink, about 3-4 minutes.

Sprinkle with lemon juice, salt and pepper.

Stir in basil and parsley.

Spoon over pasta. Toss to combine.
