White Bean Tuna Salad
This salad is such a nice break from traditional tuna salad.
ingredients
- 2 15-oz cans cannellini or navy beans
- 2 6-oz cans chunk light tuna in water
- 1 orange or red bell pepper, diced
- purple onion, diced
- dried or fresh basil, to taste
- 2 tbsp olive oil
- 1 tbsp dijon mustard
- salt and pepper, to taste

Mix together first five ingredients.

In a small bowl, whisk together olive oil, dijon mustard, salt, and pepper. Pour over bean mixture and mix evenly.

Serve cold or at room temperature.
