Savannah Style Crab Soup

“Better than Sex” Crab Soup Wonderful both as a meal and a first course for a special dinner.

ingredients

  • 1/2 cup flour
  • 1T butter
  • Cooking Spray
  • 2 cups chopped carrot
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1/4 cup chopped red bell pepper
  • 1/4 cup chopped green bell pepper
  • l garlic clove, minced
  • 1 T Old Bay Seasoning
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 dried thyme
  • 1 bay leaf
  • 4 cups clam juice
  • 1 1/2 cups whole milk
  • 1/2 cup half & half
  • 1 lb lump crab meat-very important to use good quality crab
  • 1/3 cup sherry

directions

Place flour in skillet over medium heat and cook about 15 minutes until browned, stirring constantly with whisk. Melt butter in Dutch oven coated with cooking spray. Add carrots and next 5 ingredients, saute until tender. Add Old Bay seasoning, salt, pepper, thyme and bay leaf. Cook one minute stirring constantly. Stir in clam juice. Bring to a boil. Reduce heat and simmer 20 minutes. Stir in milk and half & half, cook 10 minutes. Stir in crab and sherry and cook about 5 minutes until heated. Discard bay leaf. Ladle into bowls and serve with additional sherry if desired.
