Mixed Bean Salsa
Yummy bean salad that can be scooped up with chips like a salsa. Colorful, healthy, quick to make, great for potlucks.
ingredients
- 1 (15 oz) can black beans
- 1 (15 oz) can kidney beans
- 1 (15 oz) can white beans
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 jalepeno, chopped
- 1 can of corn
- 1/2 cup olive oil
- 1/2 cup apple cider vinegar (red wine vinegar or rice vinegar would also work just as well)
- 2 tblspns fresh lime juice
- 1 tblspn lemon juice
- 1 tblspn white sugar
- 1 tblspn salt
- 1 clove crushed garlic
- 1/4 cup chopped fresh cilantro
- 1/2 tblspn ground cumin or chili powder
- 1/2 tblspn ground black pepper
- 1 dash hot pepper sauce (to taste)

1. In a large bowl, combine beans, bell peppers, jalepeno pepper, and corn.

2. In a small bowl, whisk together olive oil, vinegar, lime juice, lemon juice, sugar, salt, garlic, cilantro, cumin or Mexican spices, and black pepper.

3. Season to taste with hot sauce.

4. Pour olive oil dressing over vegetables; mix well. Chill thoroughly, and serve cold.
