Nutty Chocolate Chip Heath Cookie Bars
This variation on a chocolate chip cookie is great for an after school snack, pot luck or dessert with a scoop of vanilla ice cream on top. Hope you like it as much as my family does.
ingredients
- 8 oz (2 sticks) unsalted butter,
- softened
- 1/2 cu sugar
- 1/2 cu golden brown sugar
- 1 1/2 tsp vanilla extract
- 2 large eggs
- 2 1/2 cu all purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cu semi sweet choc chips
- 1/2 cu toasted hazelnuts chopped
- 1 cu Heath bits
- Icing recipe follows:
- 8 oz semi sweet choc chips
- 3/4 heavy cream
- 3 Tbsp dark corn syrup

Assemble and pre-measure all ingredients.

Preheat oven to 350F.

Into a large bow, beat together softened butter, sugar, eggs, vanilla extract, and golden brown sugar.

In another bowl,mix together the flour, salt, and baking soda. Add dry ingredients to the wet ingredients and mix well.

Fold in the chocolate chips, hazelnuts and Heath bits.

Pour dough into an ungreased 9x13 inch baking dish, spread dough into corners and bake until golden brown. About 25-30 minutes.

Remove from oven and cool for 10 minutes. Pour the chocolate icing over the cooked bars. Let sit for 1 hour and then cut and serve.

ICING PREP: In a small sauce pan, whisk together the cream and corn syrup and bring to a boil. Pour the cream mixture into the bowl of chocolate chips and whisk until smooth.
notes
ICING: If dark corn syrup is not available, substitute superfine or bakers sugar in the same amount.
