Shawn's Potato Salad

ingredients

  • 10 lbs potatos (use red or regular)
  • 1 dozen eggs hard boiled and chopped
  • 1 finely chopped yellow onion
  • 1 small entire stalk celery, finely chopped
  • Mayonnaise (enough for constistancy you like)
  • 1 tablespoon lemon juice
Marinade
  • 1/4 cup vinegar
  • 1/3 cup vegetable oil
  • 1 tablespoon sugar
  • 1 tablespoon salt
  • 1 tablespoon water
  • 1 1/2 teaspoons pepper
  • add more salt or pepper to taste.

directions

Boil and cool potatos and eggs then begin with marinade. Slice potatoes into marinade and stir around so they do not stick together. Add mayonnaise (not Miracle Whip). Enough to coat the potatoes to the consistancy that you like. Add chopped eggs and stir. Add about 1 tablespoon of lemon juice and stir.
