Simple Chinese Fried Rice
After years of failures, I finally figured out how to make great fried rice. It’s simple.
ingredients
- Canola cooking oil
- 2 to 4 eggs
- 2 scallions, chopped
- 1 onion (if not using scallions)
- 1/2 cup fresh shrimp, shelled, deveined and diced (optional)
- 4 cups cold, cooked rice (leftover rice is great)
- 1 cup petite frozen peas
- 1 cup carrots, diced
- 1/4 cup canned diced bamboo shoots
- 1/4 cup diced boiled ham (optional)
- 1/2 cup diced cooked chicken (optional)
- 1/2 cup diced Chinese roast pork or left-over roast beef or veal (optional)
- 1/2 - 1 cup firm tofu (optional)
- 2 or more tablespoons soy sauce
- Red pepper flakes (optional)
- Salt and pepper, to taste

Fried rice is one of the easiest Chinese dishes you can make. However, you must follow a few simple tips. Always use cold rice (day-old rice is good) and always fry main ingredients separately.

Heat 1 tsp or more canola cooking oil. Beat eggs with 1/2 teaspoon salt and scramble in oil until firm, breaking into small pieces. Remove and reserve. Heat 1 tsp oil. Add scallions, garlic and carrots. Remove when cooked. Follow this pattern for shrimp, chicken, tofu, or other ingredients.

Quickly wipe wok, add oil, heat, and add cold rice (be sure to break up clumps). Fry until rice is hot. Now add cooked meats, vegetables (including peas and bamboo shoots), eggs, soy, salt and pepper.

An electric wok or a huge sauce pan is essential
