Tomato Ham Breakfast Casserole
This is a great, fairly low carb way to start the day
ingredients
- 3 or 4 slices bread, cut up into bite sized pieces
- 1/2 to 1 cup leftover ham, bacon, or sausage
- 1/2 to 1 cup shredded cheddar or monterey jack cheese
- 2 tablespoons chopped chives
- 6 or more eggs
- 1/2 cup milk
- salt and pepper
- herbs of your choice, basil, parsley or tarragon
- 2 large fresh tomatoes, really ripe
directions
Butter a casserole dish. Layer bread, then ham and cheese and chives and any other herbs. Mix eggs, milk and salt and pepper. If it doesn’t look like enough eggs, can add a couple more or a little more milk. Pour this mix over the bread and ham mix. Layer tomatoes all over the top. Bake at 350 for 30 min. Sprinkle more cheese all over the top and bake another 10 min.
