Artichoke Frittata
This is a yummy make a head of time appetizer.
ingredients
- 4-- Eggs, slightly beaten
- 6-- double soda crackers, crushed
- 2-- Cups Cheddar Cheese, grated
- 2-- 6oz jars of marinated artichokes, chopped—retain 1/2 of oil from jar
- 3-- Green onions including tops, chopped
- 1-- Clove garlic, crushed
- 1 Tbsp. parsley
- Salt and Pepper to taste

Sauté onions in reserve oil, cool. Add each ingredient to sautéed onions, beating with fork after each one.

Bake in 9X9 prepared pan 350 degrees.

Let cool slightly. Cut into even squares. Serve warm or cold.

This recipe can be frozen after baking to be used at a later date.
