Delicious Baked Flounder
Deliciously flavored baked flounder with Parmesan topping.
ingredients
- 2 pounds flounder or sole fillets
- 1/2 cup plus 2 tablespoons lemon juice
- 1/2 cup grated Parmesan cheese
- 1/4 cup butter or margarine, melted
- 3 tablespoons mayonnaise
- onion powder
- garlic powder
- seasoned salt
- 1/4 teaspoon salt

1. Season fillets with onion powder, garlic powder and seasoned salt and marinate in 1/2 cup lemon juice for 30 minutes.

2. Spray baking dish with cooking spray and arrange fillets in pan. Bake at 375° for about 10 minutes.

3. While fish is baking, combine Parmesan cheese, butter, mayonnaise, onion powder and salt. Brush onto fillets after baking time is done.

4. Broil fillets for 5-10 minutes or until topping is browned and fish flakes with a fork.

This can be made on the grill. Place fillets on foil coated with cooking spray and crimp edges of foil but do not seal. Grill covered over medium- heat for 4 minutes. Then, add topping and grill another 3-4 minutes.
