Fish Chowder
ingredients
- 1 large onion, chopped
- 4 Tbsp butter
- 3 large potatoes
- 2 tsp. salt
- 1/2 tsp. basil
- 1/4 tsp pepper
- 2 cups water
- 1 lb. frozen cod/haddock, partially thawed
- 1 can corn
- 1 tall can evaporated milk

Saute onion in butter.

Add potatoes, salt, basil, pepper, and water. Cover, Simmer 15 min.

Place fish on top of potatoes. Cover. Simmer 15 minutes or until fish flakes easily.

Stir in corn and evaporated milk. Cover, heat.

Sprinkle parsley on top before serving.
