Ooey Gooey Pumpkin Bars by PaulaDeen
Paula D. knows dessert. Preheat oven to 350.
ingredients
- Bar Bottom:
- 1 box yellow cake mix
- 1 egg
- 1/2 cup (1 stick) butter, melted
- Bar:
- 1 8 oz. package cream cheese, softened
- 3 eggs
- 1 teaspooon vanilla extract
- 1 15 oz. can of pumpkin pie filling
- 1 16 oz. box confectioners’ sugar
- 1/2 cup (1 stick) butter, melted

Preheat oven to 350 degrees F. Spray a 13 x 9 x 2 inch baking pan with cooking spray. In an electric mixer, combine cake mix, egg, and melted butter. Pat into the bottom of the baking pan and set aside.

Still using the mixer (I didn’t wash the bowl out or anything) beat cream cheese until smooth, then add pumpkin. Add eggs and vanilla, mixing until well combined. Beat in confectioners’ sugar. Reduce the speed and slowly pour in melted butter. Once well mixed, pour the pumpkin-cream cheese mixture over the cake mixture and spread evenly.

Bake for 40-50 minutes, but as Paula says “Don’t be afraid to make a judgement call on the cooking time...You want the center to be a little gooey, so don’t bake it past this point!” Allow to cool completely and cut into squares.
