Beer-Braised Beef

ingredients

  • 3lbs beef chunk, in chunks
  • Salt and Pepper
  • Olive Oil
  • Beer
  • Chopped carrots(3) and onion(2)
  • Parsley (3 sprigs)
  • Optional:Unpeeled garlic, fennel, ginger

directions

    -Generously season the beef with salt and pepper.

    -Over medium flame, heat enough enough olive oil to evenly coat the base of a large heavy-bottom pot. When the oil is hot, add the beef and cook on all sides until it is evenly browned and crispy. Remove and place on a plate uncovered.

    -Pour some beer into the pot, let it simmer,scrape up the tasty brown bits with a wooden spoon. Add veggies. Cook on low flame for 45 minutes. Stir occasionally.

    -Preheat the oven to 350.

    -Put beef back into pot with veggies. Add Parsley, pour in more beer so it comes up halfway around the meet.

    -Cover, place in oven and cook for 2-3 hours until meat is tender.

  • 7

    -Remove meat, place on plate, cover with foil. Pour the cooking liquid through a mesh strainer.

  • 8

    -Pour liquid over meat before serving.

  • 9

    -Goes well with mashed potatoes or egg noodles.
