Cafe Rio's Mexican Cilantro Rice
From Utah’s famous “Cafe Rio”
ingredients
- 2 cups water
- 2 chicken bouillon cubes
- 1/2 teaspoon cumin
- 1 garlic clove, minced
- 3 green onions, chopped
- 3 sprigs of cilantro, chopped
- 1 cup rice
directions
Boil water, add ingredients. Simmer for 20 minutes. This could be made in a rice cooker also. Follow your rice cooker’s instructions on rice/water ratios.
