Collards from 5 After 5
ingredients
- 2 pounds collard greens
- 6 to 8 slices bacon
- 4 to 6 cups water
- 1/2 to 1 cup chopped onion
- 2 tsp salt
- 1 tsp crushed red pepper
- Salt and pepper to taste
- 1/2 tsp Cajun seasoning (such as Tony Chacheres)

Wash collard greens until thoroughly clean. Cut out thick stalks and any thick veins. Roll leaves and cut into 1/2-inch strips.

Dice bacon and cook to render some of the fat. Discard fat (or save for another use).

Bring water to boil and add the chopped onion, bacon, salt, pepper, red pepper and Cajun seasoning. Add greens to boiling water. Cover and simmer over medium-low heat for about 1 hour, or until greens are tender.
