This recipe comes from my nephew Ryan in New York. His friend Eric created this yummy scampi.

ingredients

  • 1# rigatoni
  • 1# raw shrimp, cleaned and deveined
  • 4 large cloves garlic, minced
  • juice of 3/4 of a lemon
  • large handful of fresh basil, chopped
  • 3/4C dry white wine
  • 3 good shakes of hot sauce
  • 6T unsalted butter
  • salt/pepper to taste
  • parmesan cheese, shredded

directions

    1 Boil water for pasta. Melt butter and add garlic. Cook until garlic is slightly brown.

    2 Add cleaned shrimp and cook until half pink.

  • 3

    3 Add wine and lemon. Bring to a boil.

  • 4

    4 Add basil and cook until shrimp is just pink.

  • 5

    5 Combine with cooked pasta. Add hot sauce and sprinkle a meager amount of cheese. Toss and allow to steep 10 minutes before serving.
