Anya Von Bremzen's Caribbean Jerk Sauce

ingredients
- 1 medium onion, coarsely chopped
- 2-3 scotch bonnet chiles, chopped
- 2 garlic cloves, chopped
- 1 Tbsp Chinese 5-spice powder
- 1 Tbsp allspice
- 1 Tbsp black pepper
- 1 Tbsp brown sugar
- 1 tsp thyme
- 1 tsp nutmeg
- 1 1/2 tsp salt
- 2-3 Tbsp vinegar
- 3 Tbsp soy sauce
- 2 Tbsp oil
directions
Process into a coarse paste. Rub onto 3 pork tenderloins (or other meat) and marinate overnight. Bring to room temperature before grilling or cooking.
