Christmas Morning Crab Strata
Our Christmas morning tradition! Perfect with Ruth’s bread and a mimosa or two.
ingredients
- 8 slices white bread
- 1/2 lb. sliced mushrooms
- 1/4 cup sliced green onions
- 1 Tbsp. butter
- 1/4 cup Madeira
- 4-6 eggs
- 2 1/2 or 3 cups milk
- 1/2 tsp. salt
- 1/4 tsp. cayenne pepper or fresh to taste
- 1 tsp. dry mustard
- 1/2 lb. crabmeat
- 1 1/2 – 2 cups cheddar cheese
- Optional - one or more of the following: 10 oz chopped spinach, 2- 6 oz. cans artichokes

Trim crusts from bread and cube. Grease 7-1/2 x 12 inch pan or 2 quart dish (Use higher amounts in the recipe depending upon the size of the baking dish.).

Sauté mushrooms, onions in Madeira and butter until soft.

Spread bread cubes on bottom of greased, buttered, baking dish. Spoon

mushrooms and onions over top of read; same with veggies if used. Crumble crabmeat over the top. Pour egg mixture over crab. Sprinkle cheese evenly over the top.

Cover with foil and refrigerate overnight.

Remove and bake at 350 degrees for 50-60 minutes. Strata is done when knife inserted just off center comes out clean.
