We changed this recipe recently by substituting butterscotch schnapps for the amaretto in the sauce (don’t ask us why in the world we did not have amaretto, but had butterscotch schnapps). In any case, people that have had both versions swear the butterscotch schnapps turns a great bread pudding recipe into the “world’s best.” If you do not have stale French bread, you can cheat by cutting the French bread up in cubes and warming it in a low temperature oven until the bread dries out. Don’t have a double boiler? Place a clear heat resistant glass bowl over a pot of simmering hot water. Water should not reach the bottom of the bowl.

ingredients

Pudding Mixture
  • 3 eggs
  • 1 1/2 cups sugar
  • 1 large can Evaporated Milk
  • 1 pint heavy cream
  • 1 stick butter, melted
  • 2 teaspoons vanilla
  • 1/4 teaspoon nutmeg
  • 1 loaf stale French bread, cubed
Sauce Mixture
  • 1 cup sugar
  • 1 egg
  • 1 stick butter
  • 1/3 cup Amaretto or Butterscotch Schnapps

This is absolutely the best bread pudding I have ever had. It was acquired from one of my co-workers, who acquired it from a friend that uses this recipe at his restaurant.
